This variety of green olives called Verdial, bigger in size than Manzanilla olives, are firm and fleshy in texture and rich in flavor. Gazpacha is a traditional seasoning, mixing the olives with carrots, pickles, red peppers, pickled onions and spices like cumin and Pimentón (Spanish Paprika) in brine.
Use: With a hint of spicyness, these olives are perfect for a tapas night or as an accompaniment for pre dinner drinks.
