“Junkara” is short for “Hojun Karakuchi” which means mellow, rich and dry! As the name suggests, this one is quite a dry sake with peppery aromas like white pepper, sansho and red chili. It is a great meal-accompanying sake with minerality and dryness. The rich umami and flavours of ripe bananas, pecan and jerky, accompanied with robust acidity make it mouth-watering and appetite-increasing! A full-body sake yet not too thick and rich. A blend of aged sake, carefully crafted by Tajime Brewery in Hyogo Prefecture. Please try this one hot around 55°C-60°C! Quite a punchy one, so it’ll go with different kinds of main dish!
