Structured and angular, drinking this feels like caramel candy melting in the mouth and the sweetness slowly coats the palates. The sweetness is not the sugary kind, it’s rather from the rich umami of rice. The finish is refreshingly clean! Any Omachists (Omachi rice enthusiasts) here? The Omachi rice used in this Junmai Ginjo is made by Mame Nouen (Mame Farm) in Kurashiki, Okayama Prefecture, which has increased in popularity recently. Enjoy it chilled, at room temperature or around 50°C-55°C. Crafted by Kuwabara Brewery in Shimane Prefecture.
