The first impression is the aroma of ripe bananas, but the complexity increases as you enjoy sip by sip. A modest, smooth yet full-body, umami-packed sake with rich flavours of rice koji and a hint of white miso. The robust acidity and nutty aftertaste will not be diminished even if it’s paired with a rich main course. Please give it some time for the flavours to develop after the bottle is opened. The umami develops into a mushroom-y type of complexity within a few days. Can be enjoyed cold, but warming is the key to make the umami bloom! Pairs well from light-flavoured sashimi to fried food.
